You need to ensure the coffee you buy is of good quality. It is better to try and avoid coffee that has been left out in trays, and instead try and go for vacuum sealed bags if you can as the bag is air tight and retains coffee’s richness.
It helps to have a good coffee grinder to grind the coffee beans well. What happens when you grind coffee, is that the surface area of the coffee bean increases as you expose it to the air, thus quickening the release of the oils that give coffee its dynamically rich flavour. So as a consequence, when you grind coffee, it is a good idea to do it immediately before you are about to begin the process.
Ensure you use a fresh filter paper for each brew and make sure you use enough coffee, filling a tablespoon of ground coffee for each eight ounces of water you use. Don’t worry about using distilled water. Water through a tap is good enough or through a water filter if you live in a hard water area. Some people will only use bottled water, but really, tap water is sufficient.
Make sure you keep the drip coffee maker and pot as clean as possible, as the oils of the coffee will basically cling to anything they can and will immediately start to go rancid when deposited. Try and wash the pot and filter basket each time a fresh pot is made and try and clean the coffee maker at least once a week, and descale once a month. Sticking to this routine will ensure your coffee maker remains as clean as possible.
Lastly, ensure you take the coffee off the warming plate when its finished brewing. If it is left there, it will continue to cook. Try using a thermal coffee pot, instead to store it in, to ensure it maintains its freshness for a longer period. Thermal coffee pots are great because they have a specially designed carafe that has a double wall insulating system that ensures that no heat escapes and gets lost which is what usually happens with a glass carafe of a drip coffee maker.
